Cous Cous-bouli

One of my favorite types of cuisine is Mediterranean, I think it's because I have a love affair with Greece that's yet to be satisfied (still waiting for my husband to take me there!), so all I can do for now is eat their food and drink their drinks! 

I love several types of Mediterranean eats, but some notable faves are: falafel, hummus, spanokopita and of course tabouli.  But, unless you are me, you can't really make a meal out of hummus and pita, so I created a dish that is the perfect marriage of cous cous and tabouli.  I ate this with a spicy tomato soup.  Let me know if you try this out with another variation. 


Ingredients:
1 cup quick cooking whole wheat cous cous (available at Trader Joe's)
2 roma tomatoes finely diced
1/2 yellow onion finely diced
1 cup american parsley finely chopped
2 tablespoons mint finely chopped
1/4 scallions
2 garlic cloves minced
1 lemon, zested and then juiced
1 teaspoon salt (adjust as necessary)
Feta cheese for garnish (optional)



Method:
Cook the cous cous as directed on the box.  Mix together all the ingredients, except the cooked cous cous.  At this point, taste the mixture and make any adjustments you need to the salt, mint, etc., it's harder to adjust once the cous cous is added.  Fold the cous cous into the vegetable mixture.  Garnish with the feta cheese.
